I need some ideas on how to clean the grout at my restaurant

You need to use an alkaline cleaner. Alkalinity will cut grease.

You should find some grout brushes as well.

We sell both grout brushes and an alkaline cleaner that would help you with your task of cleaning your tile and grout.

Mix the alkaline cleaner with hot water and let it sit on the tile and grout for about 5-10 minutes and scrub the grout lines.

If you have a floor machine to scrub the tiles, it would help tremendously.

After scrubbing, suck up the dirty solution if you have a wet vacuum or mop it up the best you can.

Then rinse with hot water and dry.
